1. Roasted Whole Mung

Ingredients

  • 1 cup whole mung
  • 1 tablespoon salt
  • 2 tablespoon oil
  • 1 tablespoon black pepper

Instructions

  1. Soak 1 cup of whole mung in water and leave it overnight.
  2. Next morning, rinse and pat the wet mung on a towel.
  3. Add salt, black pepper and oil to the mung.
  4. Take a fry pan and start roasting the mung till they get evenly roasted and you see a change in colour to dark green.
  5. Once roasted, allow the hung to cool down.
  6. You can add your favourite flavours like brown sugar, black pepper, chilli powder, chaat masala, roasted coconut, etc.,. Once cooled, store the roasted mung in a air tight container and use it upto 2 weeks.

    2. Black Channa Sundal

    Ingredients 

    • 1/2 cup black chickpeas (kala chana)
    • 1 chopped green chilli
    • 1 to 2 tablespoon grated fresh or roasted coconut
    • 1 dry red chilli
    • 10 to 12 curry leaves
    • 1/2 teaspoon black mustard seeds
    • 1/2 teaspoon spilt and skinned urad dal
    • rock salt as required
    • 1 tablespoon coconut oil 
    • lemon juice (optional)

    Instructions

    1. Soak kala chana overnight.
    2. Next day, add required salt to the soaked chana and cook the chana with water in a pressure cooker.
    3. After the chana is cooked, strain the chana and keep it aside.
    4. Heat oil in a pan, then add mustard seeds and urad dal.
    5. When the mustards seeds crackle and urad dal turns brown. turn the flame to low.
    6. Now, add the curry leaves, red chillies and green chilli. Fry for 15 seconds.
    7. Now add the black chana and sauce for 5 minutes on a low flame.
    8. Switch off the flame, and add fresh coconut and lemon juice. Stir well.
    9. Black chana sundal is ready to serve.

    3. Chickpea Salad

    • 1 cup dried chickpeas (soaked overnight, as previous black chana)
    • 2 teaspoons whole black mustard seeds
    • 2 chopped green chillies
    • 10 to 12 curry leaves
    • fresh grated coconut
    • 2 tablespoons coconut oil or ghee
    • rock salt as required
    Ingredients
    • 2 cups pori / puffed rice
    • grated ½ carrot
    • finely chopped ½ tomato
    • 10 to 12 chopped coriander leaves
    • finely chopped 2 green chillies
    • ½ onion, finely chopped
    • 2 tablespoons lemon juice
    • required salt
    Instructions
    1. Take a bowl and add in all the chopped vegetables. Add in salt and mix the ingredients together.
    2. Add puffed rice and mix it well.
    3. Squeeze lemon juice and mix the ingredients
    4. You can add sev or any other vegetables like cucumber or beetroot to this mixture.
    5. And the masala puffed rice is ready to serve.

    5. Banana Chips

    • 4 unripe peeled and washed bananas sliced into thin rounds
    • 3 cups water
    • 1 teaspoon turmeric
    • 1 tablespoon chilli powder
    • coconut oil or olive oil
    • required salt

    Instructions

    1. Put the slices of banana in a solution of water, turmeric and salt and let it sit for 5 minutes.
    2. Transfer to colander to drain it.
    3. In a medium sized pan, add a few tablespoons of coconut oil and let it heat.
    4. When the oil is hot, add the sliced bananas and start frying them in small batches.
    5. Fry till it it is golden on both sides and transfer the fried ones to a paper napkin or tissue for a few minutes before transferring to a bowl.
    6. Repeat with the remaining batches of banana slices.
    7. Now, transfer the bananas to a bowl and add black pepper, salt, chilli powder.
    8. Store in an airtight container and use it upto a week.

    • 1 cup fresh corn kernels
    • 1 tablespoon pepper powder
    • 1/2 lemon
    • 1 butter cube

    1. Cook the corn kernels in a pressure for 2 whistles.

    3. In a pan, add butter and heat it till it melts and turn it to low flame.
    4. Add the fully cooked corn to pan and start salting the butter with the corn.

    • 2 cup peanuts
    • 1.5 cup jaggery or organic sugar
    • 1 tablespoon coconut or peanut oil
    • 1/4 cup water
    Instructions
    1. You can use roasted peanuts or you can roast plain peanuts in medium flame till it turns crispy. Wait till the peanut cools down.
    2. Now powder the roasted peanuts coarsely using a blender.
    3. In a sauce pan, add water and jaggery. Heat the ingredients till the jaggery melts to a jaggery syrup. Filter the jaggery syrup using a muslin or cheese cloth to remove impurities.
    4. In the same sauce pan, add the filtered syrup and reboil the ingredients in a medium flame. Now add the powdered peanut powder to it and cook till the mixture turns thick.
    5. Turn off the heat. Take a plate and grease it with oil or ghee. Pour the peanut-jaggery mixture to this plate and allow it to cool.
    6. When the ingredients is warm enough to cut, cut the peanut burfi to desired shapes and store in an airtight container for upto two weeks.

    8. Ragi Ladoo

    • 1 cup ragi flour
    • 1/2 cup jaggery or cane sugar
    • 1/4 cup ghee
    • 1 teaspoon cardamom powder
    • 12 broken cashews

    Instructions

    1. Heat 1/8 cup ghee in a pan and roast the broken cashews till it turns golden brown.
    2. Add the ragi flour to the pan and roast till you don’t smell the raw smell of ragi and it becomes sandy in texture.
    3. Roast in low flame for 7 minutes, so that you don’t burn the flour and keep stirring the flour. Turn off the flame and allow it to cool down.
    4. Now add the jaggery or cane sugar, cashews, cardamom powder to the roasted ragi flour. Mix the ingredients together.
    5. Now add the 1/8 cup ghee to the mixture and stir the ingredients. Take a handful of the ragi mixture and start pressing them to shape like ladoos. Repeat till you finish the entire mixture.

    • 1 cup black sesame seeds
    • 1 cup roasted peanuts
    • 1/8 to 1/4 cup freshly grated coconut
    • 1 cup jaggery
    Instructions
    1. Soak the sesame seeds in water overnight. Clean and drain the seeds. Dry the seeds in sunlight for a day.
    2. Dry roast the sesame seeds in a pan till the seeds burst. Set aside in a bowl to cool down.
    3. In the same pan, roast the grated coconut for minute and allow it to cool.
    4. Now grind the roasted peanuts, sesame seeds, jaggery and coconut to a powder using a blender.
    5. Now take the grinder mixture in a bowl and start pressing the mixture into small balls. Repeat till all mixture gets used up.

    • 1 cup phool makhana
    • 1 tablespoon ghee
    • 1/4 cup jaggery ( you can add more if you like your makhana to be sweeter)
    • 1 cardamom
    Instructions
    1. In a pan, heat a tablespoon of ghee.
    2. When the ghee gets melted, add the pool makhana to the pan and start roasting in low flame.
    3. Roast the makhana till it turns crispy, so that it breaks easily when pressed with your fingers. Turn off the flame and transfer the roasted makhana to a bowl.
    4. Reignite the same pan and add powdered jaggery, 1 tablespoon of water and cardamom. Heat in low flame till it starts bubbling up.
    5. Now turn off the flame and add the roasted makhana to the pan. Mix the ingredients together till the makhana is well coated with jaggery.
    6. Let it cool down and store it in an airtight container.
